Cantina Coviolo

In 1938, five men founded Cantina Puianello, which would later become a cooperative in Emilia Romagna working with over 200 growers and 250 acres in Reggiano. A few years ago, Puianello's patriarch, Giulio Spallanzani, decided he wanted to break away from the co-op and create a smaller and completely organic project that he named Cantina Coviolo. The vineyards are on calcareous and clay soils with a vertical trellis system. Employing the Guyot pruning method, the growers come from the stunning hilly area that rises from Scandiano to Canoosa, lands that once belonged to Matilde di Canossa, the "Queen of Italy" throughout the 11th and 12th centuries.
