Cave de Bissey

La Cave de Bissey is a group of growers established since 1928 in Bissey sous Cruchaud. This small Village is located in the Côte Chalonnaise between Macon and the Côte d’Or. They are the oldest union in the region and very well known locally for the quality of their wines which they sell 65% of from their cellar. The operation is comprised of 40 growers and 5 employees and they are the only growers in the area to control the whole vinification process of their Cremant from picking the grapes to bottling, offering a refined quality. The average age of the vines is 20-40 years old at 800-900 feet above sea level. They practice manual harvest and ferment in stainless steel tanks. Maturation on the lees for a minimum of 36 months.
